Ever since my visit to London, I fell in love with tapas. Funny, I know, since tapas is not quite the British thing. But there is a nice tapas bar in Covent Garden and, well, I just fell in love with tapas. We tried to make tapas work several time. Like an addition to the standard menu, on some of the days. Like a concert offer, together with the ticket. We managed to throw a tapas and sparkling wine party, which, in my opinion, was a success.
Here are some of the recipes we used.
Asparagus and smoked salmon: Boil a couple of asparagus pieces. Cut them in 5-7 cm long pieces, wrap them in smoked salmon. Make a sauce with melted butter, parsley, salt and pepper. Sprinkle over the rolls.
Smoked fish and fruit skewers: Buy two or three kinds of smoked fish and cut them in little pieces. Buy kiwi, strawberries, cherry tomatoes, grapes. Alternate the fish and fruits on skewers.
Garlicky mushrooms: Select a couple large, good looking mushrooms. Dice them finely and cook them in a bit of butter. Add a couple of drops brandy, plenty of garlic. Arrange the mushroom composition over slices of buttered bread. Ornate with plenty of parsley.
