Healthy cocoa and almonds dessert

Let’s face it. Or, better yet, let me just face it. I love desserts. Not loooove them, but kind of love them. Not sure how this came about, there was a time me and desserts, not such a good combo. But well…

In my effort to make room for desserts in that special pocket of theirs (some say no matter how much you eat, there is a special pocket for dessert) without really letting the belt really really loose, I thought I should give Google a try with something that might sound as a challenge – sugarless flourless chocolate cake. Come again?

Google says there are over 7000 options out there, but I don’t need to look any further after tasting the yummy recipe by Spoonful of Sugar Free, which I slightly adapted.

Ingredients:

  • 200g pitted dates
  • 200g raw almonds (I used oven baked almonds, unsalted)
  • 50g cocoa
  • pinch of salt
  • 10g baking powder
  • 3 eggs
  • 2 tbsp coconut oil
  • 1 cup water
  • 2 tsp vanilla extract

Whatever it takes:

  • Using a blender/smoothie maker, make a paste out of the dates and water. You can soak the dates overnight, if you’d like. I didn’t do that and it didn’t seem like an inconvenience. Add the eggs, coconut oil and vanilla extract
  • Finely ground the almonds. It might be that we do have almond meal in Romania, but grounding almonds seems like a fair enough way to go. Combine the almonds with the rest of the dry ingredients
  • Incorporate the wet ingredients into the dry ones. Combine well
  • Grease a cookie pan and bake for 30-40 minutes, over low to medium heat, in a preheated oven
  • Once the toothpick test comes out just fine, take out of the oven and let cool for 10-20 minutes
  • You can serve as is (yummy) or with pieces of fruits (yummy as well), with milk or coffee (you guessed, still yummy)

This is one cake recipe that makes the cut into the recipe book I am going to start this year. It can easily be used to make a more complex cake, with layers of this brownie goodness and a fruits cream or the like. I will give this a try, for sure.
