{the weekly cookie} butter cookies

Well, this might count as a first fail in my weekly cookie experiment. Half fail, since they seem better today, than yesterday when I first got them out of the oven.

It might be that I didn’t really, whole-heartedly trust a recipe without eggs or milk or the like. Might be that my expectations regarding cookies translate into crunchy and good-to-dip-in-milk. Anyway, this shortbread-like cookie recipe from Joy of Baking is not what I expected. Then again, I am not sure I really know what to expect when it comes to baking cookies yet.

There is one plus, though. I finally managed to buy some colored cardboard as a background for my photos, which means it’s much easier not to show the less photogenic, square, blue-patterned tile I have on my kitchen walls. Still need to restock the table runners selection.

Need you will:

  • 585g flour
  • 180g cornstarch
  • 90g powdered sugar (plus more for dusting)
  • 675g good quality butter
  • 1 tsp salt
  • 3 tsp vanilla extract (or 1 tsp vanilla and 2 tsp orange/almond/your choice of extract)
Do you shall:

  • Preheat the oven on medium heat
  • In a bowl, combine flour, cornstarch and salt and set aside.
  • In a large bowl, mix the butter with a hand or stand mixer until creamy. Add the powdered sugar and the vanilla extract and cream some more.
  • Add the flour mixture and incorporate well.
  • Refrigerate the batter for at least one hour.
  • Form little cookies with your palms and bake for 9-10 minutes in a tray lined with baking paper or greased lightly with oil.
  • Let cool in the tray for at least 10 minutes before attempting to move them to a plate or a wire rack, they are that fragile. Once cooled, dust with plenty of powdered sugar.
  • Keep in an air tight container. They feel and taste better the second day.

If I were to try this recipe again, I would live dangerously and add one egg in the combination (plus the extra flour needed to make the batter consistent). Also, I would like them to be a bit sweeter, so I would probably change the powdered sugar with plain white sugar and maybe double the quantity. Also, some orange or lemon zest would definitely cure their flavor issues.

I recommend trying these with a very flavored fruit tea, it might make for a great combination.
