{the weekly cookie} peanut butter and cream cheese

I woke up this morning without the baking mood. Now, after baking 6 dozen cookies, it feels better. There’s a lot of sugar being used in the recipe today, this might be good for the mood, too. This one is from Miss in the Kitchen.

You’ll need:

  • 110g butter
  • 125g peanut butter
  • 85g cream cheese
  • 150g sugar
  • 150g brown sugar
  • 2 eggs
  • 420g flour
  • 1 tsp baking powder
  • extra brown sugar for coating

This is how the story goes:

  • Turn the oven on and preheat to low to medium heat
  • Cream together butter, peanut butter and cream cheese
  • Add and incorporate the sugars and the eggs
  • Combine flour and baking powder in a separate bowl, then incorporate into the wet ingredients
  • Form cookies in your palm, toss in brown sugar, the press into shape using a fork or your fingers
  • Bake for 7-8 minutes, until golden brown around the edges
  • Let cool for a couple of minutes, transfer to a plate and store in an air-tight container, once they are completely cooled
