{the weekly muffin} apple and dates

Hello, everybody! Back from my trip and right back into the muffin pan. You guessed, another recipe fromĀ Cupcakes and muffins. And then, I should scout the internet for some more inspiration (this is muffin 36, which means I still have 16 recipes to go… oh, my).

Here is how the muffin story goes: the large bowl will hold 125g flour, 2 tsp baking powder, 1 tsp cinnamon. Small bowl holds 1 egg lightly beaten, 125g apple puree, 250ml apple juice, 1 Tbsp vegetable oil. Fold the wet ingredients into the dry ones. Add 150g chopped pitted dates.

Baking is simple: pre-heated over, greased muffin cups. 20 mins or so. You can sprinkle some brown sugar and cinnamon on top, once out of the oven (which I obviously forgot, but no biggie).
