I love coconut in muffins. It gives a crunchy, yet light texture. And the flavor, well, if you like coconut, you know what I’m talking about. So here is another yummy coconut based recipe, from Cupcakes and muffins, this times with a cherry on top.
Here is how the story goes: the large bowl will hold 80g flour, 110 sugar, 30g coconut flakes, 1 tsp baking powder. The small bowl will hold 60g melted butter, 60 ml milk, one egg, lightly beaten, 1 tsp vanilla extract.
Fold the wet ingredients into the dry ones, without over-mixing. Spoon the batter in the muffins pan and decorate each muffin with one or two cherries (fresh or, like I used, canned – necessarily pitted). Bake over low to medium heat.
