I love White on Rice Couple and I find myself browsing their blog for the extraordinary photography and incredible recipes. This is another recipe adapted from their collection. I used normal oranges instead of the blood oranges and M&M’s, I’ve been dying to use them in a muffin recipe.
Dry ingredients in the large bowl: 275g flour, 100g sugar, 2 1/2 tsp baking powder, pinch of salt, 150g M&M’s (the choco ones, hence the funny color of my muffins). Wet ingredients: 115g melted butter, zest and juice from two large, juice oranges, 5ml vanilla extract, 2 eggs.
Fold in the wet ingredients into the dry ones (quickly, to avoid your muffins turning all blue). Spoon the batter into the muffin cups and bake over medium heat for 15 mins.
As soon as your muffins are out of the over, glaze them with juice from one orange and 2 Tbsp brown sugar.
