This recipe from Cupcakes and muffins was supposed to be all about oranges. Somehow, I ended up buying a peach yoghurt, so here is my take on the orange muffins recipe.
In one bowl, use a mixer to beat 65g soft butter with 55g sugar. After all is smooth and fluffy, add 1/2 tsp vanilla extract and one egg.
In a small bowl, sift 125g flour with 1 tsp baking powder. Incorporate the flour into the butter mixture, alternating with 100g fruit yoghurt (I had peach) and 80ml fresh orange juice. In the end, incorporate half an orange, diced.
Bake over low to medium heat, in a pre-greased muffin pan. Let the muffins cool for a couple of minutes, before transferring them to the serving plate.
