Cupcakes and muffins strikes back, with a very flavored and tasty and fluffy recipe, this time pairing my coconut crush with plums. Too bad I didn’t have plums from my grandma’s to use, so I had to buy some, but all in all, this recipe has turned out just right.
The large bowl: 160g flour, 110g fine sugar, 30g coconut flakes, 2 tsp baking powder, 100g plums (stones removed and diced). Small bowl: 50g butter, melted, 1 egg, 70g yoghurt, 60ml milk. Mix the wet and the dry ingredients, then fold the two together.
Spoon the batter into the cups and sprinkle with some more coconut flakes. Bake over medium heat for 15 mins, until they turn a beautiful golden brown.
