{the weekly muffin} white chocolate and mint

Yeeeey! I am thrilled this is the last muffin of the year, the last muffin of my weekly muffin challenge. I did it. Yeeey! And I hope to get this project moving forward, but I don’t have quite all the details set yet, so we’ll just see.

For next year, I decided I would bake biscuits and cookies. For the first couple of weeks, I might have only over-baked ones, I’m not that good at biscuits. But by the end of the next, oh, boy, I sure will be.

Anyway, here is the last muffin of the weekly muffin challenge, again fromĀ Hamlyn All Color 200 Cupcakes.

Prepare one bowl with 200g flour, 1.5 tsp baking powder. In a kitchen mixer, mix 120g white sugar with 15g mint leaves, until the sugar turns green and the mint leaves are very finely chopped. Pour the sugar over the flour and combine.

Melt 110g butter, add 125g plain yoghurt and 2 eggs, slightly beaten. Fold in the wet ingredients over the dry ones.

Finely chop 100g white chocolate and fold in the batter. Bake the muffins in pre-greased muffin pans, over low heat, for 10-12 minutes.

    I went browsing on your site and saw the my Bucharest photo. It caught my breath! I was in Bucharest in the spring of 1991, adopting my beautiful daughter Alissa. A beautiful city who was just leaving some dark days but full of wonderful people and great memories. I now know this was meant for me to find your great blog full of wonderful recipes and thoughts. I will make this a weekly visit if not more! Thank you for being a part of my “new doors in 2013”. Your blog is lovely!
